Knights of Columbus Council 9884 answered the challenge of three cooking events and a recruitment event
The recruitment event actually began the day before. The recruitment drive was coordinated and supervised by SK Bill Miller, Membership Chairman. Bill has always kept a positive attitude, even with the limitations regarding personal contact with parishioners. This was a publicized event, many Knights helped him with a friendly smile for the people after mass. Bill, however, is on recruitment mode year round. Helping Bill were Pete Keeley, Danny Apodaca, Sean McIntyre, Mike Crivello and Dan Jacobs. A special thanks goes to brother Knight and parish priest, Father John, for announcing the recruitment drive after each mass.
Our monthly pancake breakfast was well attended and generous donations indicate very pleased breakfast attendees. Our menu has grown to include breakfast tacos. I was manning the table at the front and many asked if we were providing breakfast tacos that morning. Gentlemen, I think we are at a point of no return regarding our breakfast menu. Congratulations Bob Dubek, your risky business gamble has paid off. Of course pancake breakfasts would not be a success without the work before, during and after the breakfasts by fellow Knights such as Ron Aljoe, George Driscoll, Chuck Breneche, Steve Robillard, Sean McIntyre, Danny Apodaca, Louis Hernandez, Juan Sandoval, Bob Dubek, Tommy Meyer, LJ, Richard Rogers, Steve Schweiger, Dan Jacobs, Ken Wischnewsky and Eddie Martinez.
Once a month, the Knights provide pancakes after the 7:30 and 9:30 masses. People attending the 11:30 mass usually don’t get to eat, you don’t want to eat pancakes for lunch. After a quick transition from breakfast set up to lunch set up, we were ready for the next round. This month and perhaps on a regular basis, we provided lunch after the 11:30 mass. Tommy Meyer brought his mobile unit grills and grilled hamburgers and hot dogs in the parking lot. We had little to no advertising and still had a good showing of hungry parishioners stop at the Community Life Center for a quick lunch. Helping provide this meal were Tommy Meyer, LJ, Danny Apodaca, Louis Hernandez, Eddie Martinez, Juan Sandoval, Gary Capps, Mike Crivello, Rich McNevin, Steve Robillard and Sean McIntyre.
Finally, that afternoon was the kick off for the Saint Philip Youth (SPY). Every year the Knights provide a meal for the SPY first meeting of the year. I have to mention that the SPY is a very well behaved and extremely courteous group of young people. With Tommy Myer supervising the grilling of burgers and hot dogs, we were able to feed all those hungry teenagers. In service to SPY that night were Tommy Meyer, Danny Apodaca, Louis Hernandez, LJ, Juan Sandoval, Gary Capps, Eddie Martinez, Mike Crivello, Rich McNevin, Charlie Berneche and Steve Robillard.
